- 1 ½ cups club soda
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- 1 ½ to 1 ¾ cup all purpose flour
- 4 tbsp cornstarch
Heat the oil in a skillet.
In a separate bowl, mix the dry ingredients: salt, baking powder, flour, cornstarch, and baking soda.
Gently stir in the club soda. Be careful not to overmix to preserve the bubbles.
Coat the fish with the batter and fry immediately.
